Yesterday I had a crazy craving for something sweet and I only had some fresh bananas and a little almond milk in the fridge. Then the idea came to me to make a banana ice cream, simple and tasty! Banana ice cream is my favorite! It prepares super fast and is very tasty. The blender does almost everything!

This banana ice cream is not only tasty, but also very nutritious. It will give you a boost of potassium, a little calcium and some vitamin C and honey to strengthen the immune system. It is perfect as a snack or a healthy dessert. And if you like a sweeter breakfast, this banana ice cream is ideal.

The best part is that this recipe is quick and easy to prepare, with ingredients that most certainly we all have in the kitchen. It can be either ice cream or smoothie (just add more almond milk). I'm sure you'll love this recipe!


Banana ice cream with cinnamon

Prep time -10 mins Total time - 10 mins Serves: 4

Ingredients

  • 6 ripe bananas

  • 1 Lg lemon juice

  • 2-3 Lg almond milk

  • 2 Lg honey

  • 1 lg cinnamon

  • a powdered clove powder (optional)

  • mint leaves (optional)


Instructions

  1. Add the bananas in the blender and blend well until creamy. Add almond milk, honey and lemon juice and mix.

  2. Put the composition in ice cream or bowl shapes and sprinkle them with cinnamon.

  3. Refrigerate until frozen.

And yes, I definitely agree that we should celebrate love every day, not just on February 14th, Valentine's Day, or February 24th, Dragobete. But let's face it - isn't it nice when you know there's a special excuse to celebrate with your loved one? I'm skeptical and a little anti-holiday like that, but I'll never say no to a romantic dessert. I'm human too! 🙂


And as I was thinking about some nice desserts only good for Valentine's Day, I came up with an excellent idea: pears placed in red wine. Let's be serious, nothing can surpass them. Take a look at how beautiful they are!

Hey, but please don't be sad. In case you are alone on this day, you may as well prepare these laid pears for you. What's more, prepare a whole tray and enjoy life a little! Or you can invite a few friends and enjoy a very good dessert. I'm sure no one will say no! 😉

Pears placed in red wine are the best idea for a February dessert - or for any other moment when you feel like you want to enjoy a special dessert. And let me tell you why.


First of all, they are simply gorgeous. No, not only gorgeous, I really think it's worth putting on the cover of a gastronomic magazine. The colour, the shape, the fluffy blackness underneath. Simply perfection! 🙂


And I don't even know where to start to tell you what flavour they have. It's insane! Pears are infused in a mixture of red wine and spices (anise and vanilla, to be exact). Then, after boiling, the wine slowly turns into a syrup. So it already sounds like a recipe from heaven. What's next? We combine the resulting pears with some blackberry dough muffins, and thus we get a wonderful dessert. What more could you want? They are extraordinary!

If you want to take things to another level (but please read carefully what I'm going to tell you!), You can even add 1-2 cups of home-made vegan ice cream next to it when serving these laid pears. Vanilla ice cream fits best in my opinion. Or peanut butter. But only if you are ready to impress everyone who will taste this dessert. But beware - it creates addiction. I warned you!


A little note about wine: dry wine fits best in this combination and is the most recommended. You can use a Cabernet Sauvignon or a Merlot - whichever you prefer!

After all, what could be more romantic than some red wine and chocolate ? Nothing at all! So why not combine the two in one of the most beautiful and tasty desserts that have ever arrived at this blog (or in this stomach, to be honest)? And the best part is that you can prepare this dessert yourself without much effort. This means that the result will make you very proud, I promise. Especially if you do it out of love. For the person next to you or for you, why not? There is no right or wrong answer here.


Now let me tell you an important detail. This recipe is very simple and quick BUT. Yes, there is a "gift". You will have to be a little patient with the pears because they have to reach room temperature to reach that level of laying that will give them an incredible aroma and a very soft and silky texture. After laying, therefore, you will need to let the pears reach room temperature for a period of time. So you have to wait a bit. We have nothing to do!


My advice when it comes to this is to prepare the pears placed in red wine the day before assembling the dessert and serving it. Or very early in the morning, to have time to cool down. In the meantime, you can make chocolate blackberry.


One of my favourite things about this recipe is that the result will be super impressive. Your loved ones (or yourself) will definitely fall in love with these pears placed in red wine. Everything is wonderful: appearance, taste, texture. Everything! I really consider it to be a special dessert to serve on a really special day. And the preparation process is also quite flexible. You can prepare individually laid pears, as I did today, or you can prepare a large blackberry tray over which to place the pears. This way you will get a real pear cake placed in red wine instead of individual cakes.

Spicy, silky, sensual, sweet and very special - that's how I would describe this dessert. That's all you need to celebrate Valentine's Day this year. And it's 100% vegan / fasting too, so there's no better way than that.

Prep time - 20 mins Cook time - 60 mins Total time - 1 hour 20 mins Serves: 6

Ingredients

  • 200g white flour

  • 5 tablespoons brown sugar

  • 100g walnut kernels, chopped

  • 4 tablespoons cocoa

  • 3 tablespoons plum jam

  • 200ml mineral water

  • 50ml oil

  • a pinch of salt

  • 7g (one sachet) baking powder

  • 1 teaspoon free of rum

For laid pears:

  • 500 ml of red wine

  • 70 g sugar

  • 2 stars of anise

  • 2 cinnamon tubes

  • 4 pears, without skin and seeds


Instructions

  1. Put all the ingredients, except the ones for the icing and the nuts, in the food processor and mix until a homogeneous paste is formed.

  2. Add the chopped walnut kernels and press the Pulse function 2-3 times.

  3. Grease a muffin tin with a little oil and divide the composition evenly between the holes.

  4. Put the dish in the preheated oven at 190C for 30 minutes.

Meanwhile, prepare the pears:

  1. In a saucepan, add the pears and cover with red wine.

  2. Add the peel of the cinnamon sticks, the anise and the vanilla pod.

  3. When it starts to boil, add the sugar.

  4. Mix well and bake for 20 minutes.

  5. Remove the pears, cut the bottom and arrange them over the brownie bites.

  6. Sprinkle chopped walnuts around each pear.

  7. Cover the pears with 1-2 tablespoons of wine mixture.

After sharing my recipe for red wine poached pears with chocolate brownie earlier, I have another ace up my sleeve for you today. Yes, it’s another poached recipe, but this time we’re playing with white wine. I’m talking about these amazing white wine poached pears with vanilla-pistachio blondie, of course!


This recipe is basically the ‘lighter’ version of my red wine poached pears, you guessed it right. And let me tell you why it works. First of all, poached pears are simply incredible. An out-of-this-world experience. A gift from above. Then, you may already know how much I love blondies (the vanilla version of brownies). And lastly, who can resist when pistachio is involved? For me, this is THE recipe for success!


Even though most recipes for poached pears out there include red wine, let me tell you right from the start that white wine works just as well for this process. Sure, the result won’t be as pinkish and gorgeous, but the taste is simply divine and irresistible. Red wine poached pears are romantic, but white wine makes them fairy-like, while the texture will be just as tender. It’s all about preference, after all! 😉


And to perfectly complete the yummy pears poached in white wine, I chose to combine them with a vanilla-pistachio blondie. These two elements – the pears and the blondie – are simply amazing by themselves. But when you combine them? Oh. My. God. Amazing is an understatement, trust me. 🙂

I had to grow up and start experimenting in the kitchen in order to fully understand that this rather common fruit is a hidden gem. And, in all honesty, cooked fruit needs a little more recognition and popularity because it’s just SO good!



You may already know that I’m not a huge dessert eater. Sure, I love some homemade vegan ice cream from time to time and some chocolate lime tart, that’s for sure. But I’m not constantly craving a sweet bite after lunch. But when it comes to these white wine poached pears… well, they’re something else, I can assure you!


I could eat these pears every day if I could and I would still think they’re extremely yummy and special. You just can’t get bored of this flavor and texture! And what I love most about this recipe is that it isn’t extremely sweet. It’s just right.



Simmering the pears in white wine really brings up their aroma. And it’s gonna be intense, trust me! You can already forget about the plain, boring pears! Plus, their new, tender texture is something really special. And today I chose to combine these elements with a subtle, fluffy vanilla-pistachio blondie. Because if there’s some indulging to be done, let’s do it properly, shall we?


If you want to really go crazy, you can serve these white wine poached pears with a scoop of vanilla ice cream on the side. For some, it may sound a bit excessive, but some will simply get addicted to this dessert. There’s no wrong side here!

TIP: The only rule when it comes to the wine you’re using is to use a good quality one. If you’d drink it, then you can use it to cook this dessert as well. I recommend a Riesling or a Chardonnay this time if you want a sweet result, as dry wines tend to be a bit too ‘harsh’.

White Wine Poached Pears with Vanilla-Pistachio Blondie

Prep time - 20 mins Cook time - 45 mins Total time - 1 hour 5 mins Serves: 6


Ingredients

  • For the blondies:

  • 150g flour

  • 50g brown sugar

  • 6 Tbsp butter, at room temp (or vegan butter)

  • 1 flax egg (Mix 1 Tbsp of ground flaxseed with 3 tablespoons of water. You can also substitute for one large egg if you're not vegan.)

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • 2 tsp vanilla extract

  • ¼ tsp salt

  • For the poached pears:

  • 6 small pears

  • White wine

  • 1 cup sugar

  • 1 lemon

  • 1 vanilla bean

  • ½ cup pistachios, chopped


Instructions

  1. In a bowl, cream the butter and sugar using a hand mixer.

  2. Add the vanilla and flax egg and combine.

  3. In a separate bowl, combine and mix the flour, baking powder, cinnamon and salt then add them to the wet mixture.

  4. Mix with the hand mixer.

  5. Place round cookie cutters on a lined baking pan, pour the mixture and bake at 180 degrees C for 15-20 mins.

  6. Let them cool completely.

  7. Peel and deseed the pears. In a pot, add the pears and enough white wine to cover them. Add the zest and juice from the lemon, and vanilla bean. Once simmering, add the sugar. Stir well and cook for 15-20 minutes. Take out the pears, cut the bottom part and place them on the blondies. Sprinkle pistachios around the pear. Cover the pears with 1-2 Tbsp of the wine mixture.
