Ingredients

  • 1/2 cup Roasted garlic cloves

  • 1/4 cup (Chickpea) miso paste

  • 1 pinch Sea salt

  • 1/8 teaspoon Cayenne pepper

  • 1 teaspoon Lemon juice or apple cider vinegar

  • 1 teaspoon Maple syrup or honey

  • 1/2 cup Water

Instructions

  1. Blend all ingredients until smooth.

Sweet Basil Vinaigrette is the most delicious way to dress any salad! Made with simple ingredients and easy instructions, this will be your new “go-to” dressing!

I’ll never forget the first time I tried a version of this salad. My friend Desiree made this delicious fall salad for a Thanksgiving dinner with pears, cranberries, pecans, and spinach. This dressing made the entire dish come together, and I wanted to skip every other dish and only eat this. But, it was Thanksgiving, so obviously I enjoyed the rest of my meal. But after it was all finished, this was my favorite part! I knew I had to have the recipe.

I’ve been making this over the years for all seasons, not just the fall. I absolutely LOVE it during the first hints of spring because of the fresh taste, and I love to eat it with strawberries and avocado. It’s also one of my favourite dressings to make when I am hosting company, or bringing a dish to a social gathering. Everyone always asks for the recipe!! Since it’s the week of enjoying green food for St. Patrick’s day, I thought it would be perfect to share with all of you!


I have adapted it over the years, making this refined sugar-free and using honey as the sweetener. I enjoyed it over the weekend with arugula, strawberries, feta, pecans, and red onion. So many great possibilities with this salad dressing; feel free to dress with anything, and you won’t be disappointed! Something else I love is that this recipe will make plenty for you to enjoy salads for an entire week. Its keeps well in the fridge.

Sweet Basil Vinaigrette

Ingredients

  • 1 cup fresh basil leaves loose

  • 1/2 cup salad oil your choice, I use olive oil

  • 1/2 cup apple cider vinegar

  • 1 clove garlic crushed

  • 3 tbsp honey

  • 1/2 tsp coarse salt

  • 1/2 tsp ground pepper


Instructions

  1. Place all ingredients in a food processor or blender, and blend until smooth.

  2. Serve over your favourite salad!

CILANTRO LEMON VINAIGRETTE

This last weekend I traveled to Minneapolis for a studio lighting photography class. I have taken lots of other classes at the Minneapolis Photo Center and have been very impressed. These classes are my sole photography education apart from online tutorials.


I have had a small children’s portrait business for a few years now, but I exclusively use natural light. While I love the look of the soft natural light, I felt it was time that I finally get a good grasp on studio lighting. I most likely won’t be using it for my business, but I would love to conquer it for personal projects and frankly for sheer pride’s sake.

The class was great, and I learned some new things as well as had the opportunity to reinforce the previous knowledge I had with practical experience. I am a hands-on learner, so having the chance to practice what I read in a book is the best way for me to remember and store the information.


One of my favourite parts of attending these classes has been the food. Of course. In the past they have served everything from home made frittatas with salads to hummus spreads. I was expecting big things based on my past experiences, but sadly we ended up with burnt pizza and a basic salad with ranch dressing. They could have used some of this awesome Cilantro Lemon Vinaigrette to add a fun kick of flavour to the salad at the very least.



Cilantro Lemon Vinaigrette

Cilantro Lemon Vinaigrette is a healthy homemade dressing with fresh cilantro, lemon juice, garlic, honey and champagne vinegar for a perfect salad dressing or fantastic marinade for meat.

Prep Time: 5 mins Total Time: 5 mins

Course: Dressing

Servings: 1 .5 cups


Ingredient

  • 1/3 c. olive oil

  • 2 Tbsp water.

  • 2 handfuls cilantro

  • juice of 1/2 lemon

  • 2 tsp. garlic diced

  • 1/4 tsp. salt

  • 1 tsp honey

  • 2 Tbsp champagne or red wine vinegar


Instructions

  • Add all of the ingredients to a blender or a bowl with immersion blender. Puree until smooth and emulsified. Store refrigerated.
